IPA, Dillon Dam Brewery, Dillon, Colorado

The Continental Fresh Hop

The Continental Fresh Hop Double IPA.   Not even the Continental Divide could keep these hops apart. This brew is about as fresh as it gets.  We used four different kinds of hops grown on both sides of Colorado’s continental divide. Almost 100 pounds of whole cone hops made it from their vines to our kettle in less than 24 hours providing the freshest “champagna” of hop flavors and aromas this side of the divide. Hops Used: Cascade and Chinook from Anderson Valley Farms in Boulder CTZ and Nugget From High Wire Hops in Paonia.  8.9% abv.  $6 snifter

Dam Gogh

This is the Bier de Garde we brewed as a collaboration project to celebrate the world exclusive 2012 Van Gogh exhibit at the Denver Art Museum.  After much study we discovered that Vincent Van Gogh would have consumed many beers like this one while traveling through and painting the French countryside. Picture an old wood barrel in the darkest, coolest corner of the barn with a heap of foam on top spilling over in open, wild yeast fermentation. To recreate this brew, we used 11 varieties of mild malts with just a touch of caramel malt sweetness to balance out the funky spice and fruitiness of the Farmhouse ale yeast. Applewood and French oak spirals in the fermenter give it a hint of the old wood barrel while just a bit of Anise in the boil and dry hop lend a bit of his favorite drink, absinthe’s flavor. The result is a coppery-blonde ale with an amazing aroma of fruit and spice and a complex yet subtly balanced and extremely drinkable finish. Served in snifters.

East Wall ESB

This Extra Special British Ale was brewed using imported British malts and hops for a mild flavor balanced between toasty, fresh-baked biscuit like malts and earthy, floral hops. ~ 5.7% ABV.

Oktoberfest

A rich dark amber lager brewed with copious quantities of Munich, Vienna and Caramel malts for a big malt flavor up front, but fermented slow and cool for a crisp clean finish. Featuring just a touch of spice from German Tettnang hops.

Chili Beer

A light, crisp Mexican-style lager with over 33 lbs of fresh roasted green chilies.  Jalapeno, poblano, anaheim, habenero and even some sweet-n-spicy Fresno chilies.  The chilies this season were on the mild side, so while it smells of spicy green chili, the flavor is actually quite mild and very drinkable.  A perfect pairing for the DAM nachos!

Exit 205

Session ales come in a variety of flavors and carry lots of nicknames: Boater Beer, Lawnmower Beer, or the historical English Mild. The Urban Dictionary states that a session beer is: “A beer that is low in alcohol and has a balanced flavor of both hops and malt. The purpose being so that it can be drunk over a long session of time without overwhelming the palate or getting the drinker too intoxicated.” Exit 205 is a very light blonde ale with a thin body that greets the nose with the warm welcome of mildly toasted malts and fresh citrusy hops. It starts with a nice fresh squeezed orange & grapefruit flavor but finishes light and dry due to the superb balance with its slightly sweet maltiness, leaving you thirsty for more, pint after pint. Meanwhile, the lower alcohol means you can have another one despite having more skiing or shoveling to do or just making sure you can get home safe. 5.5% ABV.

Hopweizen

White IPA. Hopped like an IPA, brewed with oranges and grapefruit, and fermented with Hefeweizen yeast, this complex beer offers hoppy citrus aromas, clove and banana esters, and a smooth mouthfeel. 7% abv

Here’s Your DAM IPA

Dedicated to hop heads.   Spicy grapefruit aroma leads the charge to a pile of spicy, earthy and slightly citrusy hoppiness that totally dominates the subtle, yet complex, toasty-biscuity malt balance in this reddish-blonde ale.

Full-bodied caramel malts balance out the big burst of hoppy bitterness that West Coast Pales are famous for.  Seven different varieties of hops are used in this ale to provide a deep, complex hop character with not only a strong citrus bite, but some nice earthy, floral spiciness too.

An Irish-style stout brewed with caramel and black malts. Slightly dry, yet smooth and malty sweet, this draft is dispensed with a blend of nitrogen and carbon dioxide to create a velvety mouth-feel and creamy head.
